Tennessee has an assistant strength and conditioning coach. In most colleges, coaches are among the highest paid employees. Is there something wrong with this?

Of course there is. Institutions of learning have lost their way.
You often hear that college sports bring in big money to the schools but how much is really spent on education vs. right back into the sports program.
